Thank you, ladies!  I think I'll give the juice ideas a try.  Do you strain the fruit out after it's soaked a while, and if so, can it be pureed and added to something like smoothies?

I'll admit, a cobbler sounds wonderful, but it would defeat some of the purpose of trying to eat healthier. :)

Anyone have other interesting or unusual fruits or veggies they would suggest?  One of my favorite warmer-weather dishes is a jicama and cucumber salad.  Slice them thin or shred them, and soak them in apple cider or champagne vinegar with a little salt and pepper.  Sometimes I'll add some ancho powder for a hint of heat.  It's best served cold, but it's good at room temperature as well, especially at cookouts.
